Ingredients
- 2 lbs beef stew meat, cut into 1-inch cubes
- 4 medium tomatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish

Heat olive oil in a large pot over medium heat.

Add the chopped onion and minced garlic and sauté until the onion is translucent.

Season the beef stew meat with salt and pepper and add to the pot. Brown the beef on all sides.

Stir in the diced tomatoes, tomato paste, carrots, celery, dried thyme, and dried oregano.
